✨ Brown Sugar Matcha
— A Story Rooted in Japan
The Brown Sugar Matcha is more than a drink — it’s a quiet collision between centuries-old Japanese tea tradition and the modern craft cafés of today.
Its story begins in the hills of Uji, Kyoto, where matcha has been cultivated for nearly a thousand years. Farmers still shade their tea fields by hand, protecting the leaves from harsh sunlight, allowing the plants to develop a deeper green colour and a sweeter, richer flavour. This ceremonial-grade matcha, once reserved for royalty and tea masters, carried with it a philosophy:
balance, harmony, and respect for every ingredient.
As Japanese café culture evolved, modern artisans began pairing this ancient matcha with unexpected companions — one of the most beloved being kokutō, Okinawa’s traditional brown sugar. Unlike common refined sugars, kokutō is crafted slowly from pure sugarcane juice, simmered for hours until it becomes dark, complex, and naturally caramel-like. It tells its own story: earthy, deep, and comforting.
At Neeko, we drew inspiration from this combination and reimagined it into something uniquely ours.
The Brown Sugar Matcha Blow is created by layering handcrafted brown sugar syrup along the inside of the glass, allowing it to cascade naturally — a technique that gives the drink its marbled appearance. When the vibrant matcha is poured over the syrup, the colours merge like ink in water:
rich greens, warm browns, and golden tones drifting into each other.
Every sip feels like a journey — the first taste brings the bold, grassy character of matcha; the next unveils the mellow sweetness of caramelised brown sugar; and finally, both settle into a smooth, velvety finish.
It’s a drink grounded in heritage but expressed through modern creativity.
A meeting point between Japan’s timeless tea ceremony and today’s visual café aesthetic.
